The course covers general concepts of law, Algerian legislation, and general regulations (law on consumer protection, hygiene, labeling and information, food additives, packaging, trademarks, safety, and preservation).

A detailed section is dedicated to the presentation of control bodies (DCP, CACQE, Hygiene Office, ONML), and Standardization and Accreditation bodies (IANOR, ALGERAC).

A final part of the course deals with international standards (ISO, Codex Alimentarius, NA, AFNOR).
