Course description 

The course on the valorization of plant resources and products is divided into three chapters.  The first chapter is devoted to the physical and chemical criteria for the quality of plant products, such as appearance, color, average weight, average size, water content, hydrogen potential (pH), soluble extract, sugar content, titratable acidity, and pesticide residue analysis..  The second chapter focuses on the purification and analysis of plant substances and metabolic engineering. It covers concepts related to the biosynthesis of different classes of secondary metabolites: phenolic compounds, terpenoids, and alkaloids.. First, these secondary metabolites are defined, and their structures and methods of study are described.  All of this is then illustrated with examples for each type. Chapter three discusses the nutritional and therapeutic value of plant products. It addresses the many health benefits of plant products and their beneficial effects in the human diet.

Target audience

This course is intended for students enrolled in the bachelor's degree program, majoring in Plant Biology and Physiology.

General objectives

The course aims to enable students to become aware of the potential of plants; to evaluate the physical and chemical criteria for the quality of plant products; to appreciate plant resources by studying their characteristics, their potential in terms of biomolecule biosynthesis within plant cells, and their nutritional and therapeutic value.
